The secret also lies in a reduced-yield management of the site: careful pruning is a first step to keep the number of shoots on a low level and, after budding in the early summer, it is essential to ‘green-harvest’ the grapes, an important contribution to one’s quality management. This allows the vines to distribute the full amount of minerals to a reduced quantity of grapes which, in return, produce top class wines in the process.
